Market Chef John Pastor taught us all today that if your ingredients are fresh and packed with flavor you don’t need many of them. We also learned that peaches can often be used as a substitute for tomatoes because of their acidity, which is a great tip because we see peaches in the market about a month before we start seeing tomatoes. Here’s the recipe for peach salsa that had market goers swooning today.
Peach Salsa (Fresh Peach Pico de Gallo)
3 peaches, diced
1/2 of a small red onion, diced
1/2 cup of cilantro, chopped
1 tablespoon jalapeno pepper, minced
dash of salt
After prepping all your ingredients, put the red onions in a strainer and rinse for 10 seconds with cold water to deflame. This important as it will take out a lot of the onion “bite” that could overpower your salsa.
Mix together your first four ingredients and season with a dash of salt. Serve with corn tortilla chips. This salsa also makes a perfect topping for grilled chicken or fish.
